The one junk food I really, truly miss, is Pop-Tarts. So my friend and I attempted a recipe, then went our separate ways to perfect it.

1 cup whole wheat flour
1 cup oat flour
1 teaspoon baking powder
~2 tablespoons oil or melted butter
1 egg
Stevia or other sweeteners, if desired
Water as needed

Blend the dry goods, then add the rest. Add water slowly and carefully. Mix until it is a soft, pliable dough, almost like a bread dough. Roll it out and cut 6 very long rectangles, as flat as possible. Each rectangle will later be folded in half, forming the pop-tart.

For the filling, I recommend:
*Apple butter and cinnamon
Raspberry jam
Strawberry jam
Anything other cravings you may have - all sugarfree, of course

Preheat oven to 350 degrees.

Put a heaping spoonful of your filling on one half of the dough rectangle, spreading it evenly while leaving a finger width's margin around the edges. Then fold the dough over and press down the edges with a fork, sealing it. Punch ventilation holes. It looks just like a regular Pop-Tart! You can even put some extra butter, Stevia, flax seeds, cinnamon, whatever, on top for an added kick.

Bake for 20 minutes, turn over, and continue for another 10.

Serve 2 'tarts with a vegetable omelette or your favorite sausage; eat with merriment!
